Tinda is a very tasty vegetable. The small greenish ones which are hard when you touch are actually the best ones. I have made a gravy using tinda and potato.
Ingredients
4 tinda
1 carrot
1 potato
10 french beans
1 tomato
A small piece ginger
1 green chili
1/2 tsp turmeric powder
1/2 red chilli powder
1/2 tsp coriander powder
1/2 tsp jeera powder
1/2 tsp garam masala
1/2 tsp crushed pepper
1 tablespoon ghee
1/2 tsp panchphoron
1 tbsp chopped coriander leaves
Tips
Use fresh tinda and other vegetables.
Use freshly ground dry masalas,it enhances flavour.
Method
* Pour ghee on a pan, add panchphoron, once it crackles add chopped onion, ginger,green chili, tomato saute for a while, add potato,carrot,beans,tinda. Mix in.
* Add turmeric and all the other dry masalas. Gently toss and cook for 5 minutes. Now add two cups of water and pressure cook for two whistles.
*Finally garnish with coriander leaves.
