A little left over rice which I have made for lunch. A cup of it. I thought of making mixed vegetables rice. I know Aru enjoy Pan Asian cuisine. So tried a Vietnamese version of it.
Ingredients
1 cup cooked rice
1 cup mushrooms thinly sliced.
1 piece ginger sliced
6 garlic pods
1 carrot
1 small broccoli (I used a very small one)
Herbs
A little oregano, rosemary and parsely
Salt as required
1/2 tsp crushed pepper
Tips
Use fresh button mushrooms.
Precooked cold rice taste better in this one pot meal.
Make sure you add gingly oil for the authentic flavour.
Method
*Pour gingly oil, add garlic and allow it to cook,it's should become brown and burnt, add mushrooms and cook it.
*Add carrot and chopped broccoli. In medium flame cook further. Add salt and crushed pepper.
*Finally add cooked rice, mix in. Add herbs and a tablespoon of soy sauce. Adjust salt. Cook for another minute. Off stove serve hot.
*It's a one pot wholesome meal in itself. If you wish you can serve it with a fried egg.
