A starter which is very filling and I am sure you will love it. A simple dish which enhances the delicate flavour of mushrooms and paneer adds nutrition value to it. A healthy version of mushrooms filled with cottage cheese.
Mushrooms stuffed with paneer
50 grams paneer(crumbled)
10 large mushrooms(remove the stalk)
1/2 green bell pepper
4 pods of chopped garlic
1/2 tsp turmeric
1/2 tsp red chilli powder
1/4 tsp jeera powder
Salt as required
1/2 tsp mint leaves chopped
1/2 tsp ginger chopped
Tips
* I use large mushrooms. Wash dry and remove stalk.
* Cook garlic until golden brown. The aroma of garlic taste good in the dish.
* I have filled half capsicum with leftover paneer and roasted it on tawa.
Method
* Wash and remove stalk from mushrooms.
* In a heated pan pour little oil, add garlic and ginger cook for a while,add green chilies, crumbled paneer, salt and mint leaves. Cook for 2 minutes. Off stove.
* Take each mushroom and fill paneer stuffing. If anything is leftover fill it inside green bell pepper and roast it along with mushrooms.
* Place a griddle/tawa, pour olive oil, carefully place mushrooms, cover and cook for 2 minutes, flip and cook for 2 more minutes.
*Remove and serve hot with green chutney.
Mint leaves chutney
A few Onion shoots
1/4 tsp dhaniya powder
1/4 tsp chilli powder
1/4 tspJeera powder
2 tablespoon Curd
Salt as required
* Grind all the above ingredients to a fine smooth chutney.
