Avacado salsa bread

Avacado salsa bread.

These avacado's are from a farmer. I got them along with passion fruit a week ago. They were all bright jade green glowing raw fruits. After a week's time each one started turning into brownish mauve. The seeds I will plant in grow bag. The flesh of the ripe fruit is used to make salsa.

Recipe for Avacado salsa.

One avocado
Salt to taste
1/2 teaspoon chili powder.
1/2 teaspoon coriander powder
3-4 pudina leaves thinly sliced
Coriander leaves also sliced quantity according to preference
Quarter of a lime- juiced
1 small tomato
Smash avocado and add all spices and leaves
Then add tomato (diced)
Mix everything. Eat on toasted bread. Its refreshing!!

Mixed vegetables subzi

Mixed vegetables gently tossed with jeera, salt, red chilli powder, coriander powder, garam masala and cooked in low flame till potatoes turned soft.

Lotus stem starter

Lotus stem. I have used Swiss knife and German knife for trimming and slicing. Left it for steaming in steamer by adding turmeric and salt. Will start making a simple starter once I had in yellow submarine.

Process for this simple starter, in a heated tawa pour olive oil, carefully arrange steamed lotus stem. Allow it to turn into golden brown. Sprinkle red chilli, crushed pepper, a little oregano. Toss gently adjust salt and finally finish with tamarind chutney and rosemary hummus.

Egg curry with mushrooms

Egg curry with tawa fried mushrooms, garlic and thinly sliced onions. A quick curry which can be made with less effort.  Chop a handful of mushrooms, one onion and few garlic pod, pour a little olive oil and roast vegetables until they turn into golden brown. Add salt, turmeric, red chilli, dhaniya, jeera powder and mix well. Boil an egg, remove shell and cut into halves. Let it also get roasted along with other veggies in slow flame. Garnish with freshly chopped coriander leaves and serve with phulkas.

Lauki, palak gravy

Its a very simple gravy. Chop one lauki into tiny cubes, chop a few cow pea, cook in an earthen pot by adding water, turmeric and salt. Once its soft, add cooked lobia 2 ladle full. Mix well, reduce flame add chopped palak, add coriander, jeera, red chilli and garam masala powder respectively. Mix well, adjust salt finally add a tadka of jeera in ghee. Its best with phulkas or I will have it as it is. Its divine.

Palak paneer with baked sweet corn

A few bunches of palak washed and chopped, pour a little oil and saute in a heated pan, till soft, use a hand blender to smash it. Add salt, turmeric and garam masala. Mix well, keep aside.

Bake a corn in microwave for about 4 minutes. Use a knife to remove kernels.

In a small pan pour a little ghee, add cubed paneer (200grams) add few methi leaves. Roast it till golden brown. Add paneer and baked corn to prepared palal gravy. Adjust salt and serve with freshly made phulkas.

Porridge with lobia and vegetables

A simple porridge with lobia and vegetables, a little oats, lentils and roasted onion and garlic. A perfect porridge for rainy days.

Method of preparation

A handful of oats, lentils and moong dal, two handful of lobia soaked, add one chopped tomato, a tiny piece of ginger, one green chilli. Cook adding 6 cups of water in pressure pan, add salt and cook till two whistles. In a heated pan add olice oil, chopped baby onions, garlic and cook till golden brown. Add to porridge and adjust salt, pepper and serve hot. You can add sauce of your choice. I like to keep it very simple.

Mango rice with vegetables

Raw tothapuri mango is my favourite. Today morning harvested a bunch of fresh coriander with its seeds. Then its a quick one pot meal with loads of vegetables like carrot, beans, beetroot and fresh pudina, coriander. Added few whole spices to mango rice.

Also harvested fresh beans and few egg plants. Beans I have added in mango rice. Egg plants I will use them for raitha.

Its tangy, sweet mildly flavoured and gets ready in very less time. Best way to make fussy kids eat their lunch. I will serve it with egg plants raitha.

Method of preparation

In a thick bottomed pan pour oil, add whole spices, chopped vegetables, pudina and dhaniya leaves. Give a toss. Add washed basmathi rice, turmeric, red chilli, dhaniya , jeera, salt. Mix gently. Add boiled water and cook till two whistles. Serve with raitha of your choice.
