Tomato rice with bhindi raitha

Tomato rice with sesame, pepper, coconut and other dry masalas. Bhindi raitha. Its raining tomatoes after a good monsoon shower.

Tomato rice recipe and method of preparation

Wash and keep aside basmathi rice about 1 1/4 cup

Ripe tomatoes 4
One onion
A few garlic
Make a coarse paste out of tomatoes, onion and garlic. In a heated pan pour little oil and cook this paste till oil separates. Keep aside.

Dry roast jeera, dhaniya, elachi, clove, cinnamon bark, red chillies, pepper, white sesame, peanuts, hing cake a small piece once it release aroma add coconut, curry leaves, ginger and green chillies. Off stove once cooled transfer in a mixer add litte water if needed make a coarse paste.

Chop carrots and any other vegetables you wish to add. I have used green peas. Pour a little oil and saute along with bay leaves. Once vegetables turned tender add basmathi rice. Mix it gently, add salt. Mix in coconut ground masala paste, mix in tomato paste. Its time to add turmeric and water. I've added 21/2 cups of water. Kept it for just one whistle in pressure cooker. Finally garnish with chopped coriander leaves and squeezed little lemon extract as I had them in abundance.

Bhindi raitha

Chop bhindi's into tiny pieces, cook it in little oil till they turn golden brown, mix in curd, salt, green chillies and coriander leaves. Serve it with tomato rice.

Its rich in flavours and ground masalas and tangy tomatoes make it a delicious one pot meal. Do try I am sure you will love it.
