The beauty of purple cauliflower comes in it's full glory when you slice it into florets.
Purple cauliflower stir fry
Ingredients
1 purple cauliflower
2 green chilies
1/2 an inch grated ginger
1 tablespoon oil
Salt
1 cup beetroot leves sliced.
Method
Wash, remove the leaves and separate florets, soak in warm water with a little salt. This will clean and remove any worms in the cauliflower.
In a kadai pour oil, add washed and cleaned cauliflower florets, cook in high flame, add green chillies and grated ginger, mix well, add salt. Once fork tender add chopped beetroot leaves and cook for a few minutes.
Off the stove, serve with your favorite noodles or rice.
